live tilapia or any other fish 600g

green onion 1

ginger 1 piece small

Sichuan peppercorn 2g 1 teaspoon

star anise 2

salt 25g 1 tablespoon

regular soy sauce 15g 1 tablespoon

water 800g 3 cups + 1/4 cup

marinate in the fridge overnight

oil as needed, mainly with cumin powder and chili pepper powder, add little bit with coriander seed powder and Sichuan peppercorn powder, pinch of salt

preheated oven 475°F/245°C bake for 25 minutes

then add the top layer of spices

same temperature bake for an additional 5 minutes

before take it out from the oven, turn on the broiler for 2-3 minutes, to give it a BBQ flavor
